Cabbage with Apples and Walnuts Gluten Free

I have eaten my fair share of cabbage in life.  My dad loves steamed cabbage, my great grandmother used it in her wonderful 4 ingredient vegetable soup (will share in the future), coleslaw for cookouts or with chicken and dumplins (pre GF of course);  you get the idea. Well, you know how I like new experiences, especially when I have a surplus of a food item that I do not want to waste.  So what in the pantry will go with this surplus of apples (how did I get so many?)  And I have to confess, I love it when a dish looks pretty, yes, I said pretty. I love the colors in this recipe:  the purple cabbage, green cabbage, the red/green of the apples and the brown from the turkey bacon and walnuts. Like I said it looks pretty!!  But the taste? Wow, these flavors are beyond delish with the sweetness of the brown sugar blended with the vinegar.  Add the texture of the crunchy apples and walnuts with those heavenly bits of bacon on that wilted cabbage, honey give me another serving.  I was planning on serving some chicken with this, but it was so good, I ate it all alone and went back for another helping. Of course, this recipe meets all my requirements: Easy, Tastes good, Nutritous  and let’s not forget, looks Pretty!  Hope you enjoy as much as we did.

Cabbage with Apples and Walnuts Gluten Free

Ingredients
  • 6 bacon slices, cooked and crumbled
  • ½ cup firmly packed brown sugar
  • ½ cup water
  • ⅓ cup apple cider vinegar
  • ½ medium cabbage, shredded
  • ½ medium red cabbage, shredded
  • 2 medium cooking apples, thinly sliced
  • ⅓ cup chopped walnuts, toasted
Instructions
  1. In a large pot add sugar, water, and vinegar; cook over medium heat 3 to 4 minutes or until liquid is reduced to ¾ cup.
  2. Add cabbage; cook, stirring constantly until cabbage wilts.
  3. Add apple and toss gently.
  4. Remove from heat.
  5. Sprinkle with bacon and walnuts.
  6. Serve immediately.
