Brown Rice Casserole Gluten Free

I have been trying to incorporate more good grains in my diet. You know the whole first of the year, I need to lose some holiday weight yada, yada, yada…

Anyway, my goal is to try a new grain, well,  one I don’t use very much, make that hardly ever, in my cooking and meal planning at least once a month.

This brown rice casserole met all my requirements: new grain-brown rice, tasty, easy to prepare, tasty, healthy, tasty,gluten free and did I mention tasty?!

Brown rice, onion and chestnuts are a delicous combination and don’t forget those mushrooms.

The chestnuts give it the texture I so love.

So, if you think you are not a fan of brown rice, unless it is stir fry or fried rice, try this easy casserole.

Ingredients
  • ⅓ stick butter
  • 1 small onion, diced
  • 1½ cup rice
  • 10 ounces gf beef broth
  • 1 cup sliced mushrooms
  • 1 small can water chestnuts, drained
  • 1½ cups water
  • salt and pepper to taste
Instructions
  1. Brown onion and mushrooms in butter. Mix all ingredients in large covered casserole dish.
  2. Bake at 350 degrees fro 45 minutes. Check at 30 minutes to determine if rice is done. If not, cook longer.
