This cashew cream is the perfect go-to item when I need cream cheese in a recipe.
I was not sure about this recipe the first time I tried it but it was great!!

Cashew Cream

Ingredients
- 16 ounces of cashews, soaked for 4 to 8 hours. Strain, rinse and strain again.
- 2 tsp apple cider vinegar
- 4 Tbsp lemon juice
- ¾ cup water
- ½ tsp salt
Instructions
- Put all ingredients in a food processor and puree until creamy and smooth.
